Okay so you know I've been trying to think of yummy things to make for dinners. So I went through my recipes and came up with this. It's still many old favorites as I still haven't found many recipes that are new and exciting that I want to eat and that the rest of the family will want too. Cooking for 4 people with differing tastes is challenging (and I have much empathy for those with larger families!).
On the menu for this week:
- Bulgogi
- Chicken Lettuce Wraps (trying to find a version close to the ones I love at PF Cheng's)
- Pasta alio e olio with brocolli (Pasta with garlic and oil with brocolli) - so simple for the night that Jessi has dance and don't have much time to fuss
- Confetti Quesadillas
- Calzones (mozz and pepperoni for Mike, cheese for the kids, and spinach artichoke for me - from old school Rachael Ray)
- Enchilladas de Pollo
And then we're going out to dinner the 7th night. So looking forward to this.
The next album that I'd like to work on is an 8x8 or 6x6 (leaning towards 8x8) of our summer vacation with our college friends and their kids in Orlando. I started pulling some photos this morning and will continue gathering supplies this week. I didn't do much journaling while I was on the trip. I could really kick myself for this. The next trip I take, I'm making one of these. I love what Kari did with it. To give a pretty home to my travelling thoughts.
