I found these photos and forgot that I hadn't posted them before now. I was reminded this afternoon when I heated up a cup of this soup that I had made in late summer/early fall. I froze all the leftovers and tossed some cooked faro into it today and enjoyed a tasty lunch that took a few seconds to put together (only having to remember to defrost it a day or two before).
I loved the flavor of the broth. If I make this again I would cut the onions differently (maybe chop them instead of slice them). In the leftovers I didn't enjoy the long strands of caramelized onion (though I remember liking them when I first made it... go figure!).
I love a big pot of soup cooking away on the stove and I am reminded that I still have many more recipes that I want to get to in Anna Thomas' Love Soup. I actually craving the Green Soup from that book. Mmmmm! And I do happen to have a head of kale needing some love and attention in my fridge. I think I just figured out the next soup I will make.
